Jose Maria is one of the most famous restaurants in Segovia, a sort of institution where all celebrities passing in town go to taste a typical Cochinillo (baby pig), one of the Region's specialty.

The restaurant is located in the heart of the Old Town, just next to Plaza Mayor. It is in a typical old building, very charming. The specialty of the house is definitly the cochinillo, but they serve also all kinds of Spanish specialties;

As all very famous places, prices are higher than the average other restaurants in town.

José Marìa is the best-quoted restaurant in Segovia. The tapas will surprise you: fish, black pudding, patatas bravas etc. but what will amaze you if you never had it before is the Segovian speciality that they serve with the complete ritual: the speciality is suckling pig (a piglet fed on its mother milk): to demonstrate how tender the pig is, a master dressed in his traditional outfit will come and cut it with a plate, and to prove that the plate is not a fake one (and to bring good luck according to others) drops the plate on the floor and brakes it into pieces.Less
